How we work

Cane and Copper

We start by harvesting fresh organic cane on farms in the East End of Grand Cayman. Traditional West Indian techniques and our Christian Carl copper pot still transform the fresh cane juice into young rum, every step carefully guided by hand.

Barrels & Currents

We escort the rum, in American white oak bourbon barrels, to a secret location off the coast of the Cayman Islands. Anchored at 42 feet, exactly seven fathoms deep, our handcrafted rum enjoys underwater currents that gently rock the spirit and constant temperatures found nowhere on land.

Timely Escape

When the time is right, we release the barrels and introduce Seven Fathoms Rum to the world. The world has thanked us: WSWA Double Gold, 90 points from Wine Enthusiast, and friends won all along the way.
